Ingredients
400g two-grain flour
120g AMINO ANIMO ALMOND PROTEIN
2/3 cup olive oil
1 cup tangerine juice
1/2 cup raisins
20 g baking powder
1 teaspoon baking powder
1 teaspoon grated cinnamon
1 teaspoon apple cider vinegar
1 pinch of salt
2 tablespoons coconut flakes
Preparation
- Lightly flour the raisins.
- Pour all the liquid ingredients into one bowl and all the solid ingredients (except the raisins) into another and mix the two mixtures well separately.
- Make an opening in the solid mixture and pour in the liquid mixture, stirring constantly with a spatula.
- Add the raisins.
- Pour the mixture into a non-stick cake tin.
- Bake in a preheated oven at 160 degrees Celsius for about 50 minutes.
- Check if the cake is done. If you insert a toothpick or knife, it should come out clean with no liquid mixture on top. If not, bake the cake for a few more minutes.
- When you take the cake out of the oven, sprinkle it with shredded coconut and press the surface lightly so that it sticks.
- Leave the cake to cool before removing it from the tin and cutting it.
